Picked up this Genesis today for free! Built in 2013 based on the serial.

Already gave the insides a cleaning, extracted a seized burner screw, removed the surface rust on the exterior stainless, and trashed the sun cracked knobs.

Just needs new burners, heat deflectors, flavorizer bars, and some steak. This one already has the stainless 7mm grates, so no need to replace. (y)

Did you put butter in the pan? Damn that looks amazing.
i keep a damp coating of olive oil on the cast-iron between useage while stored in the cabinet, actually oven.

cut about (1 1/2") off a stick of butter.
throw that on the skillet. let it melt as the skillet gets hot. let it get to smoking but not burning. if you have an infared thermometer, 500⁰+ up to 700⁰. if your side burner will get that hot. also, outside unless you want all your smoke detectors in the house going off!!!!!! outside keeps the kitchen clean too🤣😂🤣😂

I've used too much butter and it kills the sear. so if you prefer less crisp sear that's a trick. 4min each side. also, if by chance it is too rare for someone. (probably puts beans in there chili too🤣😂🤣😂) just give it a second go. 4min side again.

so easy you can't mess it up. it'll scare ya, you'll think it's burned & you ruined it. but you haven't. enjoy!!!!

went by the grocery on the way home. 2 beef filets side by side. 1 prime & 1 choice. so, for the halibit i got both. side by side comparison. is prime really noticeably better.

i guess i need to make sure & qualify this as my opinion & its worth what you paid fot it!!!!🤣😂🤣😂

both spiced up exactly the same & cooked exactly the same. pretty thick so i went with hot cast-iron with butter. threw them on at 550⁰. 5min each side. should have added more butter for the second side. also, if you don't like as much sear as i got, you can double sear at half the time interval.

taste differential - negligible
tenderness - prime but just enough to notice eating one bite of choice then a bite of prime.

the choice had a really small sliver of gristle, the prime pieces of bad gristle was larger.

anyway, here's the cooking process & outcome. pretty tasty!!!!!!

8lb pork butt smoked for 16hrs for my daughters first communion and it was perfection. Nothing more than patting it dry then rubbing Traeger pork rub on it. I put it on last night at 9 and pulled it and wrapped it in foil this afternoon at 1:00 and put it back on the Traeger on keep warm until we ate it at 6:00. Simple and consistent
