Since I have a Pedal Monster as well, I can only see 4 measurements on the same screen.
I monitor:
Regen Status
EGT Temp 11 (Sensor 1) - This shows temp just before the Turbo
EGT Temp 14 (Sensor 4) - This shows temp right after the DPF filter
Fuel Rail Pressure

@Tugboat stated, I use EGT Temp 11 to monitor how hard I am pushing the truck, especially when I am towing up grade in the mountains. If I get to 1300 degrees, I back off and try to keep it at 1250 max.
I use EGT temp 14 to verify that I am in Regen (Sometimes the status indicator does show "ACT" for active when I am in regen).
I monitor the fuel rail pressure to ensure everything is normal. I have not seen any anomalies yet, but this should show: a clogged filter, leaking sensor, or problem with the fuel pump (I have the CP4).

The second pic shows the truck in Regen, but the ACT not picking it up - this is why I use temp sensor 14.
Temp sensor 14 maxes out at about 600-700 when not in regen.
