I know Whiskey Thief will let you stick your finger in the fermentation tank on their tour. Not sure they'd let you jump in (plus you'd be in your birthday suit in front of a lot of other people), but wouldn't hurt to ask. When I asked them about why they allow it (only distillery I've come across that does and also encourages it), their thought is whatever germs are on your hand gets killed during the distillation process.

GOOD NEWS — Bottle Limit Lifted on Reserve IV

Quick update, and it's a good one.

I spoke with Tim at The Whiskey Blendery this morning, and it turns out there was a misunderstanding about what our group was after. It's all sorted — we've got the entire barrel. So the 2-bottle limit I put in place yesterday is officially lifted. Order what you want.

One legal caveat to know about: the State of Texas limits distilleries to selling 4 bottles per person, per month. That's not our rule, it's state law, and the Blendery has to stay compliant with it. So each transaction is capped at 4 bottles.

If you want more than 4, no problem — you'll just need to split it across two transactions, and I'd ask that the second one be placed by another adult 21 or older. Spouse, family member, buddy, whoever. That keeps everything clean on the Blendery's end, and I'd rather not put Tim in an awkward spot after he's been such a good partner on this.

Every one of these releases teaches me something about what works for this group, and this one was a real step.

Reserve IV moved us into a higher age statement — and with that, a higher price point. That was a genuine question mark going in. If we can show that this group will support older barrels, it opens doors that were previously closed to us.

I'm talking about things like 20+ year American Light Whiskey — if you've read any of the reviews on Penelope's releases, you know just how remarkable those barrels can be. Older-age bourbons. Barrels from legacy distilleries. That's the tier where you find pours that are genuinely special, not just very good.

We can always come back to 8–9 year MGP or Green River barrels, and I'd have no hesitation doing it — those are excellent whiskies and they're what built this program. But the next tier up is where things get really interesting, and your support on this release is what makes that possible.

So thank you. Truly. Every bottle of Reserve IV that goes out the door is a vote for what we get to chase next.

Are you going to confirm you received our emails with the order confirmation, if shipping emails won't be sent out for a couple weeks? I know that's probably a lot more work but just curious. Don't want my order cancelled if the email didn't go through.
