While many of us are still just enjoying our first ever whiskey release, it is time to start working on the next one. As mentioned in the barrel preference survey, we'll stick with The Whiskey Blendery as our primary source for this program. The philosophy of The Whiskey Blendery is to "let the whiskey do the talking". We went into picking our first barrel looking for a good bourbon, found an even better rye, and landed on an awesome 95% wheat whiskey. Had we not "let the bourbon do the talking" we would have ended up with a good whiskey, but not a great one.
What said, I have shared the summarized feedback from our survey with The Whiskey Blendery team so they are aware of the group's preferences. They'll keep that in mind as they identify barrels for us to choose from, also throwing in a couple they think are particularly good to give us the opportunity to select what best, versus chasing a mashbill or finish.
We'll plan for the next release to come out sometime in August - early September.
In preparation for this next release, the first step is the ever so important step of picking the barrel. The Whiskey Blendery team will advise on whether or not the barrel picked might be enhanced from being finished in a second barrel (whether toasted or another finish). If so, they'll test it with a small amount to see how it performs. Testing not only includes seeing how the whiskey evolves as it sits in the second barrel - evaluating the color, nose, palate and finish - they also see how it is proofed down, aeriated, etc. to see if other adjustments produce the best product.
Some times it works and other times it doesn't. The Whiskey Blendery won't bottle something they don't think is either ready or meets their very high quality standards. If the test goes well, they'll then scale that up to a full production batch (basically dumping all of our selected barrel into the identified secondary barrel) and will then monitor its progress to complete the finishing process when the whiskey reaches its peak. Finishing a full barrel can take a few days to a few months - it is ready when its ready and this process can't be rushed.
Not knowing what barrel we will pick and what finishing, if any, will take it to the next level, we need to start the selection process now. Number of people mentioned in the survey they'd be happy to help pick if mailed samples, and a few are willing to travel (only a couple anywhere) to pick a barrel. For anyone who hasn't done a barrel pick before, this is a really fun experience. The Whiskey Blendery will effectively give us a chance to thief whiskey from potentially dozens of barrels, all the ones they think are ready now for bottling.
The barrel selection will be on Tuesday, June 17 from noon to 4 or 5 p.m. in Oak Point, TX (a suburb in the Dallas-Fort Worth Metro area) and is open to 7 members from the forum. Keeping the group to this size will balance having enough perspectives to land on the best choice while not having too many perspectives (as "too many cooks in the kitchen" can also work against us). There's no cost to be a part of the tasting panel, but you do need to make your own travel arrangements if traveling from out of the DFW metro. Flight into DFW with hotel in Frisco, TX would be my recommendation.
Want to join in on the fun and help pick the barrel? Please send me a PM by Friday, May 30 to indicate interest in participating. If we have more than 7 people raise their hand, I will use the same tool that was used for the barrel raffle to randomly select 7 people.
What if we don't get anyone available to select a barrel? Well, my wife and I will have a very fun afternoon tasting whiskey. Once we narrow the options down to the top couple of barrels, we will get sample bottles of each to then send samples to a randomly selected group of people who indicated on the survey that they would like to help pick the barrel.
