We butchered 3 hogs saturday down here. Not too often we can have that much meat outside without having a cooler or the meat spoiling. My cousin made 110 pounds of dry sausage and 130 pounds of fresh sausage here sunday
We smoked the entire loins in the smoke house and then cut chops/steaks
Make boudan, liver sausage, curing bacons now, fried out some lard, even had time to drink some whiskey........

I am literally dying for a good Boudin recipe if you would care to share one!! I attempted it a few months ago from several internet recipes and threw 10# of meat in the trash... I didn't even want to save it for my dog. I know a good Boudin and the recipe I made was not even classified as edible. I was pretty upset, the pork by itself was delish as was the rice (cooked in the pork stock), but something went way wrong when I mixed the two and added the final seasonings.

I couldnt give you a recipe if i tryed......all i can say is keep trying buddy. It must have pork and it must have some pork liver but the wife puts several different kinds of peppers, onions, and smoked jowl bacon in the boiling pot.
no matter what, dont try to make it healthy. If its lean it wont be worth feeding to yer dog
And dont be cheesy on the seasoning......make it hot.....the rice takes away lots of heat

I need to find a specialty butcher for some pork liver, I used chicken liver with the pork butt meat. Pork liver is tough to come by in a supermarket here.
 
Oriental supermarkets near you?
I just did a search and it looks like one just opened up last September about 15 miles away. We have a couple others that are 30-45 miles away, I'd never think that they would selll pork liver. I'll check it out. Thanks.
